Today is the last week for my Whole 30 challenge. I absolutely LOVE eating clean. I love how I feel and I love to get creative with our meals. I will be looking forward to baking a few paleo desserts now that I’ll be off the Whole 30.
I’m so excited because this week I bought a Vegetable Spiral Cutter. Look at these awesome sweet potato noodles I made. It literally took me 1 minute to cut them!
I get asked a lot of questions from people who are trying to eat clean and get their family to eat clean.
When you are deciding to eat clean, my biggest piece of advice is to keep it simple. You don’t need to go to Whole Foods and spent $500. Start off with your favorite meals. How can you make them cleaner? If it’s spaghetti, substitute the pasta for zucchini. If it’s baked chicken, toss the store bought marinade and make your own. Add plenty of vegetables.
When you are serving meals to your family, don’t make a big deal about it. Don’t declare one day that you will NEVER EAT UNHEALTHY AGAIN! Your kids and maybe your husband will panic!! Just serve the meal like its no big deal. When we made burgers, we just set out lettuce to wrap the burger in, instead of buns. If they wanted bread with their burger, they could use sandwich bread (which we still had.) They all choose to eat their burgers without the bun now because it tastes better. If your kids are picky, ask them to help you prepare the meal. They are more likely to eat what is served if they help. Try to get as many veggies in your meals as possible. I put veggies in my soups, stews and sauces. No one really knows.

Sunday: Super Bowl!!
Brisket, sweet potato fries, veggie tray, chips and guacamole and apple nachos
Monday: Spaghetti with Zucchini noodles, salad
Tuesday: Out to dinner for Taylor’s birthday
Wednesday: Grilled Chicken, Roasted Brussel Sprouts and Bacon, roasted eggplant
Thursday: Chicken Stir Fry with Cauliflower Rice (It is our favorite!)
Friday: Meatloaf, mashed cauliflower, roasted green beans, salad
Saturday: Hamburgers with lettuce instead of buns, topped with sauted mushrooms and bacon, sweet potato fries
