I’m well into my Whole 30 Challenge. For those of you who aren’t familiar with it, it is when you eat whole foods for 30 days with no sugar (not even honey or maple syrup!). Mark and I eat paleo, but we started finding ourselves eating out too often, loading up on chips and salsa too much, making too many baked goodies, then of course we had leftover wedding cake that we couldn’t allow to go to waste! 🙂
January has been a perfect time to recommit to eating the way we love! In order to eat right, I need to plan ahead. My motto is fail to plan, or plan to fail. If I allow myself to get too hungry, I will want to grab something that isn’t good for me! I absolutely love eating clean. I love getting creative with our meals. When you are trying to eat clean, you don’t want to feel like you are depriving yourself…so plan some awesome meals. Get creative. Don’t forget to work in vegetables!! It doesn’t have to be difficult. Most of my meals are so easy.
Since I have so many people on my Plexus team who are also doing the challenge, I thought I would share my menu here with links to recipes.
Monday- Paleo Chicken and Eggplant Parmesan, roasted beets, squash
Tuesday- Lemon Rosemary Chicken, roasted green beans and salad
Wednesday- Sausage and Onion Quiche with Sweet Potato Crust, salad
Thursday-Paleo Chicken Stew – I will put it in the crock pot because we have co-op on Thursdays.
Friday- grilled chicken and veggies (zucchini and peppers)
Saturday- Breakfast for dinner! Eggs, bacon, and sweet potato hash browns
Sunday- Super Bowl….stay tuned for my super bowl menu!
