It’s been a while since I’ve updated you on our lifestyle change. I get lots of emails and questions so I wanted to try to answer as many as I could.
My husband and I have been eating Paleo for 2 1/2 years now. I can’t imagine us eating any other way.
I started eating Paleo mainly for health reasons. I was always having stomach issues and would get headaches constantly. I went to my Naturopath and she told me I had Candida. I went on the candida diet for 30 days. After 30 days I realized I had never felt better in my entire life. After the 30 days, someone told me about Paleo. I knew I didn’t want to go back to eating junk, so I jumped right into Paleo. (The candida diet is very similar so I didn’t have to make any other changes.) My husband jumped on board at that time.
Mark had put on weight after his father passed away. I now look at pictures and I’m shocked at how big he was. Before we started eating Paleo, Mark had already realized he didn’t like how he felt so he hit the gym. He dropped about 35 pounds but then plateaued. He couldn’t seem to lose any more weight no matter how much he ran.
We thought we ate “healthy”. We cut down on our portions. We even shared meals at restaurants. We ate things like yogurt and smoothies and salad (with dressing!)
Paleo changed how we looked at our food. It is not a quick fix. It does take time but it works. You will feel better.
We don’t count calories nor do we share meals any more. We eat amazing food and we eat a lot. Our food is good food. We aren’t filling up on bread. When you cut out all the processed food, you will realize your body actually craves good food.
After Mark started eating Paleo, he lost another 37 pounds.

Okay, here are my most asked questions. Please know that I’m in no way an expert on this subject nor any other subject! All I can tell you is what is working for us. I’m only posting this in hopes that it might answer some of your questions and could possibly bless someone the way it has blessed me.
Do you have any books that you recommend?
I recommend Robb Wolf’s The Paleo Solution.
What do you eat?
We eat meat, vegetables, nuts and nut butter, some fruit (mainly berries), and eggs. We don’t eat anything processed. If I bake something I will use almond flour or coconut flour. Instead of dairy, we use almond milk or coconut milk (unsweetened.)
What do you eat for breakfast?
We eat a lot of eggs. We mix our eggs with LOTS of vegetables and meat. Lately we’ve been eating okra (from our garden) with our eggs. It’s delicious!
If you don’t like eggs, eat a protein and vegetables. Think of breakfast as just another meal. Leftovers from last night’s supper would even work. Every once in a while (like once every 6 months) I make Paleo waffles or pancakes. Those are a treat.
I don’t have time to make breakfast. What should I do?
Yes you do. Get up earlier or make it the night before. (Hard-boiled eggs and bacon are great on the road.) Breakfast is very important. Make sure you eat some protein. It will fill you up and keep you full longer.
Do you drink coffee?
I don’t but Mark does. He uses almond milk in his coffee. I drink a cup of hot tea with almond milk every day. (I would drink coffee but I get kidney stones, so right now I have to cut it out.)
I’ve been slowly weaning myself off sugar, but it’s hard. How did you do it so easily?
I never said it was easy. It was hard. My body detoxed for about 3 weeks. I was a sugar addict. I would recommend quitting cold turkey. You can’t wean yourself off if you are still feeding your body sugar. The more you eat, the more you crave. Even now after 2 1/2 years, if I eat a piece of cake, then I will crave sugar. Get it out of your house! Also, I didn’t eat fruit for 3 weeks while I was detoxing. Fruit is very sweet and it would make me crave sugar, but that’s me.
I love bread. I don’t think I can cut it out.
I love bread too! I just don’t eat it. Gluten isn’t good for you. Grains cause inflammation. Once you cut it out, your cravings will go away. Also, when you go to a restaurant and they bring the bread to the table, have them take it away. Why let it tempt you?
Why are you eating like this? You don’t look like you need to lose weight.
Sugar gives me migraines. I can eat sugar and within minutes I will get a headache. My body doesn’t handle sugar or grains well so I don’t eat them. As I get older my body is changing so I constantly have to work out. I let myself go for years, so I’m still toning.
What do you eat when you are out?
When we travel and stay overnight, we pack a lot of our own food.
When we go to restaurants, we usually order steak and vegetables or a sweet potato. We are very specific when we order. I will ask if they add sugar or if there’s gluten in something. Salads are always safe. I don’t eat dressing at all. If you need dressing, try olive oil or juice from a lemon or lime.
I will pack some almonds or a Lara bar for a quick snack on the road.
In and Out Burger serves protein style burgers, that means no bun. It is wrapped in lettuce. (I order a double, no cheese, no sauce, protein style with grilled onions.) I don’t do condiments. Mustard is usually safe. Everything else has sugar.
What you you drink?
Mainly water. Sometimes I will drink a glass of unsweetened tea.
Do you ever cheat on your diet?
First of all, I don’t refer to paleo as a diet. It is just how we eat. Diets have such a negative vibe.
Okay, yes, there are days that we don’t stick to 100% paleo. When I first started eating paleo, I didn’t eat anything else for almost a year. Now I’ve relaxed some. You will realize what your body can handle. For example, corn doesn’t bother me, so I will occasionally eat corn tortillas and chips when we go to a Mexican restaurant. Rice, on the other hand, makes me very sick so I stay away from it. If there’s a birthday or a holiday, we will sometimes eat the dessert. (I will usually take a sugar/starch digestion pill so my body can digest it.) We try not to be too legalistic with our food, though I’m sure people around us think we are. We will splurge every now and then.
