Making popsicles is on our summer bucket list and I must say that is about the only thing we’ve accomplished so far this summer. Okay, not really…but almost. But who’s complaining because I love making popsicles!
This popsicle recipe is perfect for summer.
Strawberries & Cream Popsicles
4 cups strawberries, hulled
1/4 cup heavy cream
1 TBSP freshly squeezed lemon juice, if needed
3/4 cup plus 2 TBSP syrup*
Puree the strawberries in a food processor. You should have about 2 cups pureed strawberries. Pour into a bowl with a measuring spout or a pitcher. Add the syrup. Next, add the cream. Taste. It should be sweet and creamy. Add the lemon juice if the mixture tastes flat.
Pour the mixture into popscicle molds. Insert sticks and freeze until solid, 4-5 hours.
Heat 2/3 cup sugar and 2/3 cup water in saucepan until warm. You can add syrup to popsicle mixture when it’s cool or warm. If you have leftover, store in refrigerator, until the next batch.
I added a small piece of washi tape to the sticks to dress them up a bit.
